Getting to Know Me: An Introduction

Hi, I'm Ashley, a proud homeschooling mom to five amazing kids.  I have a passion for teaching, preparing meals, baking and supporting others on their faith journey with Christ. My homeschooling journey began when my oldest was about to enter second grade. While I loved the school he attended, the Lord had different plans for our family. Little did I realize the incredible adventure he had in store for us! Over the years of homeschooling all my children, We've experienced both highs and lows, with more surely still to come. I find joy in serving my family by preparing home-cooked meals. The kitchen is my happy place--- a space where we gather, share about our day, and have those meaningful, heartfelt conversations while I cook. I also love serving others by making meals for them during difficult times or simply to remind them that someone cares. I invite you to join me on my journey of faith, homeschooling, and sharing some delicious home-cooked recipes along the way. 

 

Recipe for the day: 

Sourdough Pancakes 

2 eggs

1cup of sourdough discard

2 tbs sugar

1 1/2 cup of milk

1tsp vanilla extract

1 3/4 cups all purpose flour

1/2tsp salt 

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon 

Mix together the eggs, sourdough discard, sugar, milk and vanilla extract and whisk until well combined. 

Add in flour, baking soda making powder, salt and cinnamon. whisk until just combined, do not over mix, some clumps are okay!

heat a skillet over medium to low heat and then add some butter or our favorite bacon grease. I use a 1/4 cup to scoop and pour on the skillet . wait for bubbles to form on the edges, about 1-2 minutes then flip. let the other side cook for 30 seconds to 1 min. 

Serve these pancakes with butter, maple syrup, and fresh fruit. 

 

These are an absolute favorite in our home! Not only are they incredibly easy to make, but preparing them has become a fun family activity. My 6-year-old loves gathering the ingredients, while my 11-year-old handles the measuring and pouring. Even my 2-year-old gets in on the action with the mixing! Meanwhile, my 9 and 13-year-old boys take care of setting the table—and, of course, the eating. Haha!
